Dinner Recipe

We had Stuffed Peppers tonight for dinner 🙂 it was so delicious.

Here is our recipe. We actually added one jalepeno and one onion chopped to our meat and Brother Jenkins said he makes his with Unseasoned Wild Rice. OH THE POSSIBILITIES!!!

3/4 lbs Ground Beef, browned

1 pkg.  (10 oz.) frozen corn

1-1/2 cups Thick ‘N Chunky Salsa

1-1/2 cups  cooked instant brown rice

1 cup Shredded Colby & Monterey Jack Cheese, divided

1   each large red, yellow and green pepper, cut lengthwise in half, seeds removed

1/2 cup water

HEAT oven to 400ºF.

COOK crumbles, corn and salsa in large nonstick skillet on medium 5 min. or until heated through, stirring frequently. Remove from heat. Stir in rice and 1/2 cup cheese; spoon into pepper halves.

PLACE in 13×9-inch baking dish. Pour water into bottom of dish; cover.

BAKE 30 min.; sprinkle with remaining cheese. Bake, uncovered, 10 min. or until cheese is melted.

Best Daddy

Sacrament meeting was hard today listening to the speakers talk about their Father’s, and hearing the primary, and also YW sing. I don’t like having my dad so far away. Luckily I have grandpas in Heaven and a Heavenly Father watching over me! I think I am slightly biased but I really do have the best Father around. There are too many reasons why so I hope my daddy knows I LOVE HIM a whole lot. I am truly grateful for him and the sacrifices he has made for me as well as ALL THE many lessons he has taught me. SORRY for the gray hairs I gave you! You are and forever will be my HERO and role model. I look up to you and hope I can be as talented, secure, confident, strong person when I decide to grow up!

I’m also thankful for Joe, my brother-in-law, for spoiling my sister and treating her like the PRINCESS she is, as well as giving me the two cutest niece and nephew ever. I love that whole little FOX family!

Also thankful for Grandpa Rob Tamblin. My dad away from dad who worries about me just as if he were my dad. Love the Tamblin’s also!

Babysitting

Babysat the Hanscom boys tonight. Just put them to bed (its easy!). We played a game called Rats! . It was so much fun! Who would have known? I have had it for maybe 6 years and never pulled it out until tonight. I also taught them spoons. They haven’t quite got the knack of it but it is their NEW FAVORITE game. Overall, a very easy, fun night!!! Gotta love them!
